We celebrate Thanksgiving twice each year.

It is usually just the four of us on the actual day, and then we head to the Bay for dinner with the family on the Saturday after.
I absolutely LOVE Thanksgiving, so I have no trouble celebrating it twice.  My mother in law makes an amazing, very traditional, meal.  Ian and I like to change it up a bit for our family’s Thanksgiving.

Duck takes the place of turkey.
Our green beans are wrapped in bacon instead of hiding in a casserole.
 Much to Stella’s dismay, there’s not a mini marshmallow in sight.
And our squash is more savory than sweet.

Spaghetti Squash with Brown Butter and Crispy Sage

Ingredients

  • 1 medium to large sized spaghetti squash
  • olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 tbsp butter
  • 2 tbsp fresh sage {roughly chopped}

Instructions

  • pre-heat the oven to 375
  • carefully cut the squash in half
  • scoop out the seeds
  • lightly brush the cut sides with olive oil
  • sprinkle with salt and pepper
  • place cut side up on a baking sheet
  • roast for 45 minutes
  • cool slightly, and then using a fork scrape the flesh of the squash
  • melt the butter over medium heat
  • once melted add in the sage
  • cook, stirring frequently, until the butter browns, and the sage is crispy
  • drizzle the butter over the squash

 Served with a salad, spaghetti squash  also makes a terrific meatless main dish.
