It has come to my attention, thanks to my children, that I don’t make cookies very often.

It feels like I am baking all the time, and I didn’t see how it was at all possible that I don’t make cookies.

But they were in fact correct. It’s been a while since I made these gingersnaps, and really those were for ice cream sandwiches. Before that there were s’more cookies, way back in the summer.

Cookies are quite possibly the easiest ways to win over your kids, and what they take like 30 minutes, if you don’t count the dishes and cleaning up  the flour that I will inevitably spill on the floor. Happens every time.

I’ve been known to offer cookie bribes, don’t judge. A mom’s gotta do what a mom’s gotta do.

And homework gets done a WHOLE lot faster when cookies and milk are involved.  It’s hard to be grumpy when you ‘re eating cookies, especially when they are FULL of m&ms.

They’re happy like sprinkles only better  because they’re  chocolate filled. And because it is almost October, and it has been fall for an entire week, they’re also pumpkin. Not over the top pumpkin, just enough to make them SUPER moist.

My kids were skeptical; they are pretty tired of me adding pumpkin to everything, but one taste and they were converts.

  • 2 1/4 cups ap flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup, 2 sticks of butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla
  • 1 1/2 cups of m&m candies


  • pre-heat the oven to 350 degrees
  • line baking sheets with parchment or silicone mats
  • sift together the flour, baking soda, cinnamon, and salt
  • cream butter and sugars until light and fluffy about 2 - 3 minutes
  • add the egg, pumpkin, and vanilla
  • stir in the flour, and then fold in m&ms
  • the dough is pretty sticky, but this is normal
  • scoop 2 Tbsp size balls/cookie onto prepared baking sheets, they do not need to chill first, but you will want to gently press the back of a spoon to slightly flatten the cookies
  • bake 15 minutes
  • allow cookies to cool 2 minutes, then carefully remove them to complete cooling on racks
