snickerdoodle almond butter
it should be easy to eat healthy in the summer
I mean no one wants to wear a swim suit feeling all heavy after a huge pasta meal right?
I love snacking on fresh fruit and veggies, but truth be told I’d rather be snacking on toasted marshmallow ice cream
salads are delicious, but in the summer there is nothing better than a burger right off the grill
and all the summer parties
mother’s day and father’s day brunches with pancakes and egg casseroles all over the place
birthdays, graduations, and the 4th of July
SO MUCH GOOD FOOD
for me, summer is the hardest time to keep with a healthy eating plan
temptation is everywhere
so today as I was getting ready to eat my apple instead of the snickerdoodle I was craving, I got an idea to turn my almond butter, which is the ONLY way I can eat an apple, into snickerdoodle almond butter
compromise people
Ingredients
- 1 1/2 cup raw almonds
- 1 Tbsp coconut oil
- 1 tsp raw sugar
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
Instructions
- place all of the ingredients into a blender jar (a high power blender works best)
- pulse at a high speed until you have a smooth consistency
this snickerdoodle almond butter is my healthier version of cookie butter, and completely got me over the mid-afternoon I want to eat everything in the house hunger
if you don’t have a high power blender such as a blendtecย ( I use the twister jar to make nut butters)ย , a food processor will work as well
it may seem that your almonds will never turn to butter, but trust me keep pulsing, and if you feel that your almonds are too dry, add a bit more coconut oil

Snickerdoodle and Almond butter?? Wow! What a clever idea. The most exotic butter I have tried is macadamia butter. I must try this recipe.

So here’s the thing. I have only tried Almond Butter a handful of times and never really been a fan. That being said…I think this might change my mind! ๐
well I do like it pretty much any way, it is SO much better with the cinnamon and vanilla – give it a try, it just may change your mind
