I have been making my kids graham crackers since they were teeny tiny.
They may not be tiny anymore, but they LOVE snacking on grahams, especially when they are topped with melty chocolate and marshmallow.

Over the years I have tried MANY different recipes and different flavors
chocolate, peanut butter,  chocolate & peanut butter, red velvet, even apple cinnamon, but
my favorite, and the one I use as the base of the s’more pizza, is a recipe adapted  from Smitten Kitchen

Summer is all about the s’mores around here. When we added a fire pit table to our deck last year, it made s’more making possible pretty much all year long. We use it ALL the time, but every once in a while, even after dark, it’s too hot to sit by a fire, no matter HOW badly we want s’mores.
This s’more pizza is a fun and easy way to make s’mores for a crowd, no fire needed.

S’more {Pizza}

Ingredients

  • 2 cups whole wheat or white whole wheat flour
  • 3/4 cup brown sugar, packed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 Tbsp butter, cut in small pieces
  • 1/4 cup honey
  • 1/4 cup milk
  • 1 Tbsp pure vanilla extract
  • 1 10 ounce bag of chocolate chips
  • 2 1/2 cups of mini marshmallows

Instructions

  • pre-heat the oven to 400 F.
  • in the bowl of a stand mixer combine the flour, brown sugar, baking soda, and salt
  • add butter and mix until you have a coarse meal
  • add honey, milk, and vanilla, and mix until the dough comes together - it will be VERY sticky
  • on a well floured surface, roll into a large circle (about 1/4 inch thick)
  • gently transfer the dough to a pizza stone or baking sheet
  • prick the dough with the tines of a fork
  • bake @400 for 8 minutes
  • top with the chocolate chips and return to the oven for 6 minutes
  • pre-heat the broiler
  • smooth the melted chocolate chips, and top your pizza with the mini marshmallows
  • place your pizza under the broiler until the marshmallows are toasted - this will only take about 1 minute
  • cool pizza at least 5 minutes before cutting into slices
