yes, s’more week;  s’mores are so good  one day just isn’t enough.

I tend to be more classic when it comes to my s’more.

Ritz s’mores are good, s’mores with peanut butter cups are good, but I prefer the original. A couple graham crackers, a Hershey bar, and a nicely burned marshmallow. To change it up a little  I’ll  use a chocolate, or peanut butter, or even a chocolate peanut butter graham. But really I’m a plain Jane when it comes to my s’more.

I knew though that plain Jane wouldn’t cut it for s’more week,

so I added all the goodies you’d find in a s’more and mixed them into a cookie.

I got the idea from this recipe over at  kevin {&} amanda, so I knew they would have to be amazing, and I was right. With all the flavors of a traditional s’more without all the campfire mess, these cookies were a BIG win {and yes we ate WAY too many at the pool the other night}

S’More Cookies


  • 10 large marshmallows
  • 1/2 cup butter {softened}
  • 1 cup of brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup of flour
  • 1 cup of graham cracker crumbs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chinks


  • spray a baking sheet with cooking spray
  • place marshmallows on baking sheet, and place under the broiler until they begin to brown {about a minute}
  • turn over, and roast the other side {set the roasted marshmallows aside}
  • pre-heat the oven to 350
  • in a bowl combine the flour, graham cracker crumbs, the salt, and baking powder {set aside}
  • cream together the butter and sugar
  • scrape down the sides of the bowl and add the egg and vanilla
  • add the marshmallows, and then the flour mixture
  • when everything is incorporated, add the chocolate chunks
  • drop by 2 Tbsp spoonfuls onto a lined baking sheet
  • bake 9 - 11 minutes
  • allow to cool for 2 minutes before removing from the sheets, and finish cooling on a cooling rack
