My slow cooker really gets a workout. The busier I am the more it gets used. With the holidays right around the corner I have been using it at least three times a week, and on more than one occasion, like every taco Tuesday, I could use a second one.  One for the shredded chicken one for the refried beans.

This slow cooker chicken curry is not only delicious, it is a cook once eat twice meal. Plus, it is beyond easy. Simply throw everything in the slow cooker, set it, and forget it.  The hardest part of this recipe is cutting up the butternut squash. That is a workout. I love to serve this slow cooker curry the first night over rice or cauliflower rice, and then the leftovers get tucked into pitas for another easy and delicious lunch or dinner.

As much as I love homemade pitas, some days there just isn’t time. Most of the store bought versions I have tried are dry and pretty much tasteless. Kangaroo Pita Pockets are neither. They are so soft, almost like homemade, and just as delicious plain as they are stuffed with slow cooker chicken curry.

Ingredients:

  • 2 pounds boneless, skinless, chicken thighs
  • salt and pepper
  • 1 lb small golden potatoes
  • 1 medium sized butternut squash, peeled, seeded, and cubed
  • 2 small onions, quartered
  • 1 can of coconut milk
  • 2 Tbsp curry paste (or powder)
 

Directions:

  • rinse and pat dry the chicken thighs
  • season chicken with salt and pepper
  • place chicken potatoes, squash, and onion in the slow cooker
  • whisk together the coconut milk and curry
  • pour over chicken and vegetables
  • cover and cook on low 5 hours

The first night, make sure to serve this curry with plenty of Kangaroo Pita Pockets to soak up that delicious sauce; you will not want to waste a drop.  For the pitas on the second day, I like to shred up the leftover chicken thighs to make stuffing easier.

This recipe could also be made with boneless skinless breasts, but I love the rich flavor of the thighs

The only thing better than an easy meal during the busy holiday season, is an easy meal like this slow cooker chicken curry that is cook once eat twice.
