After a summer of overindulging in weekly sushi dates and daily cocktails at at the pool. A few too many burgers, hot dogs, and ice cream cones, it is time to make a serious effort to eat better.

For our family this means a bit more protein with fewer carbs. This pancake and bread lover is having a bit of a hard time time with that one. It also means more vegetables and fewer sweets. SO far, getting more vegetables into our diet has been easier than I thought with meals like this sweet and sour chicken fried rice  or roasted vegetable mac and cheese. The kids hardly even notice.

What they do notice is the serious lack of sweets in the house. Every day they get home from school thinking they’ll find something other than apples, carrots and cheese and crackers to snack on. Charlie has been gobbling up pb&j’s for dessert just to get something sweet.

So I thought I’d surprise them with this skillet brookie for homework time. Half chocolate chip cookie, half brownie, topped with a scoop of vanilla ice cream this skillet brookie is made for one, but my sugar deprived kids didn’t mind sharing one bit.

Ingredients:

  • for the cookie -
  • 1 1/2 Tbsp butter, softened
  • 2 Tbsp brown sugar
  • 1 small egg yolk, lightly beaten
  • 1/4 tsp vanilla
  • 2 Tbsp flour
  • 1/8 tsp baking soda
  • dash of salt
  • 2 Tbsp chocolate chips
  • For the brownie  -
  • 2 Tbsp flour
  • 1 Tbsp unsweetened cocoa
  • 1 Tbsp + 1 tsp sugar
  • 1/8 tsp baking powder
  • dash of salt
  • 1 Tbsp milk
  • 1 Tbsp butter, melted
  • 1 small egg yolk
  • 1/4 tsp vanilla
 

Directions:

  • preheat oven to 350 degrees
  • grease a small 6 inch cast iron skillet
  • to make the cookies, beat together the butter and brown sugar, blend in the egg and vanilla
  • add the flour, baking soda, and salt and then fold in the chocolate chips
  • press cookie dough into one side of the skillet
  • for the brownie whisk together the flour, cocoa, sugar, baking powder and salt
  • stir in the milk, butter, egg, and vanilla
  • spread batter into the other half of the skillet
  • press a few chocolate chips into the top
  • bake brookie for 15 minutes
  • serve topped with ice cream

The ingredient amounts for each half are small. The brownie part of this brookie is super easy to mix by hand. The cookie however needs some elbow grease to cream such a small amount of butter or use a hand mixer for easier blending.

If you don’t have a small 6 inch skillet you could make the brookie in a 4 inch ramekin. It will be quite a bit thicker and take longer to cook through, but those under-baked gooey parts are the best if you ask me. I always prefer to under-bake my cookies and brownies, but if you don’t just add a few minutes to the baking time.

Everyone deserve a sweet treat every now and then right? Even those trying hard to eat better.
