an iced coffee and a single serving brownie are the perfect way to enjoy a summer afternoon
Summer is the perfect time to kick back, relax, and let your hair down a bit. When your kids are on break, that may be easier said than done.
Don’t get me wrong; I love having them home for the summer. But between the swimming, picnics, ice cream dates, not to mention trying to get work in there too, alone time can be hard to find.
When I do find a few minutes to relax, I like to make it count. During the summer I LOVE to sit outside with my iced coffee, and if I really want to treat myself, a brownie to go with that iced coffee. But I have a serious love for brownies, and if I make a pan of brownies, I will no doubt eat way too many brownies, and it is swim season after all. Brownies and bathing suits don’t exactly go hand n hand.
So I made a brownie for one. A single serving brownie, baked in a skillet, ready in less than 30 minutes, and just begging to be eaten outside by the pool with a tall iced coffee from International Delight.
I cannot think of a better way to spend my down time, no matter how little of it there is.
Ingredients
- 1/4 cup flour
- 3 Tbsp cocoa powder
- 3 Tbsp sugar
- 1/4 tsp baking powder
- 1/8 tsp espresso powder (optional)
- dash of salt
- 2 Tbsp milk
- 1 Tbsp butter, melted
- 1 Tbsp vegetable oil
- 1 egg yolk
- 1/4 tsp vanilla
Instructions
- heat oven to 350 degrees
- sift together the flour cocoa, sugar, baking powder, espresso powder, and salt
- whisk together the milk, butter, oil,egg and vanilla
- add liquid ingredients to the dry, and mix just until combined
- pour batter into a mini 6 inch skillet
- bake brownie for 15 minutes
- cool 5 minutes, and then serve warm
*If you don’t have a mini cast iron skillet , you can bake the brownie in a ramekin – this may increase the baking time by about 5 minutes to ensure the middle is cooked through.
