a fast and easy way to add  blueberry to your breakfast table, this simple blueberry syrup is delicious drizzled on all your favorites

i’ll be he first to admit, that of all the berries, blueberries are my least favorite. i can snack on raspberries, blackberries, or strawberries all day long. ¬†blueberries no so much, but i am a huge lover of blueberries in my breakfast foods.

blueberry muffins [3], pancakes [4], even blueberries in my zucchini bread [5], i cannot get enough.

and as it turns out i am a big fan of blueberries on my breakfast foods as well.

tomorrow is the 4th of july, and it is also my 19th wedding anniversary. with vacation only a few days away, ian and i didn’t really plan anything special, but i do love a good holiday meal. obviously for the 4th of july that means red, white, and blue.

our anniversary breakfast usually involves crepes with raspberries. with whipped cream or creme fraiche we’ve got the red and the white, but no blue. this year i plan to top the crepes with this simple blueberry syrup.

the recipe is basically the same as this blackberry syrup [6] that i made last summer. two ingredients are all you need; good quality maple syrup and blueberries.

just before the syrup came to a simmer, i was afraid that it wasn’t going to turn out as well as the blackberry version; the color was a bit green and not attractive at all, but then a few moments later after coming to a steady simmer, the berries began to burst into the most gorgeous color.

of course i had to do a taste test on today’s pancakes before i serve the syrup to my wonderful husband tomorrow.

Ingredients:

  • 1/2 cup good quality pure maple syrup
  • 1 cup of fresh blueberries

Directions:

  • combine syrup and blueberries in a small saucepan
  • bring to a simmer over medium heat
  • continue to cook, stirring occasionally, until the berries begin to burst (about 5 minutes)
  • cool slightly before pouring, but the syrup is best served warm
  • any leftover syrup can be kept in an airtight jar in the refrigerator for up to a week

not only is this the most gorgeous syrup ever, it is absolutely delicious; one bite and i was in love. this simple blueberry syrup is going to become a summer staple in the kinnaird house.
