make valentines day breakfast extra sweet for your sweets with these delicious red velvet waffles
I’m squeezing in one last red velvet recipe before valentines day, and I’m pretty sure that this is my very favorite one. Anytime you can pass dessert off as breakfast is a good thing.
I love that valentines day is on a weekend this year. Not that these red velvet waffles aren’t worth getting up extra early to make, but they’re a lot more fun to enjoy when you’re not in a rush out the door. Even better, we have a four day weekend. I am SO looking forward to a a few extra days to unwind. Our weekends tend to go pretty fast with dance class, basketball practice and a game every Saturday.
Come Sunday we have a weekends worth of work to get done in one day. This Sunday we will be enjoying a fun family day knowing that we don’t need to get to school on Monday, and because Sunday is Valentines Day, we will be starting with delicious red velvet waffles.
- 1 1/4 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 Tbsp sugar
- 2 Tbsp cocoa powder
- 1 1/4 cups buttermilk
- 2 Tbsp butter, melted
- 1 egg
- 2 tsp red food coloring
- whipped cream and chocolate chips for topping
- pre-heat waffle iron
- combine flour, baking soda, salt, sugar, and cocoa powder
- whisk together the buttermilk, butter, egg, and food coloring
- pour the wet ingredients over the dry, and whisk until combined
- spray waffle iron with non-stick cooking spray (if needed)
- pour batter ( my iron uses about 1/3 cup per waffle)
- cook until deep red and crisp on the outside (about 3 minutes)
- serve topped with whipped cream and chocolate chips
These red velvet waffles are delicious with freshly made whipped cream and chocolate chips, but I bet they’d be just as good drizzled with cream cheese glaze.
