I may not be a big chocolate lover, but every now and then it sure is a nice afternoon pick-me-up.

I made brownies last weekend, and chocolate cookies, and  when I went to have one after lunch, they were GONE. My kids are good like that. They can make chocolate disappear like nobodies business. I never even saw them eating, but there it was, an empty pan in the microwave. I’m thinking I may  need to find a new hiding spot.

But today I was hoping to find something chocolaty, and we had  nothing. I could have  eaten the chocolate pie I made for Charlie’s class party, but that would be wrong. I could have  baked another batch of brownies, but that would take too long, and I was already really needing that pick-me-up. So I went with my stand-by brownie in a mug.

I used the “healthier” hot cocoa mix I made a few weeks ago, and then with the holidays, and all things red and green, right around the corner I decided to make it red velvet (I opted for a bit less red than usual, if you want a brighter color, add a few extra drops) .

Red velvet hot cocoa is one of my favorite cold weather treats, and this brownie is just as good. And come on, a delicious dessert ready in less than 5 minutes, you cannot beat that.

Ingredients

  • 1/4 cup flour
  • 1/4 cup hot cocoa mix
  • pinch of salt
  • pinch of baking powder
  • 2 Tbsp butter, melted
  • 2 Tbsp buttermilk
  • 1/4 tsp vanilla
  • 5 - 6 drops of red food coloring (more if you prefer a deeper color)
  • handful of marshmallow bits

Instructions

  • in a microwave safe mug combine the flour, cocoa, salt, and baking powder, stir to combine well - you do not want any clumps
  • stir in the butter, buttermilk, vanilla, and red coloring, you want the batter as smooth as possible
  • add marshmallow bits (optional)
  • microwave on high 60 - 90 seconds, check after 60 - do not over cook,
  • use caution the mug will be hot
  • top with whipped cream

Marshmallow bits and whipped cream may be overkill, but I say go for it!
