Red Velvet Crepes





With Valentine’s Day  only a few days away,
I’ve been on a bit of a red velvet kick.

There were brownies

and cookies

I’m planning on pancakes for the actual day.
{heart shaped of course}

and then I was thinking,
that if you can make red velvet pancakes,
why not red velvet crepes

we LOVE crepes,
and now that I’ve made them so many times,
they don’t take any time at all
{my first attempts at crepes took FOREVER}

I thought they would make a nice after school treat,
celebrating Stella’s first week at a new school,
{a very successful week I might add}
and a three day weekend.

Oh how I LOVE a long weekend!

I used my favorite crepe recipe
and simply added a bit of sugar, cocoa powder,
and of course

once cooked, I filled them with dark chocolate
folded them up
topped them with whipped cream
and more chocolate


I don’t know about you, but I consider this one awesome after school treat:)


Red Velvet Crepes
2 eggs
1 cup of flour
2 cups of milk
3 tbsp melted butter
1 1/2 tbsp cocoa powder
1 tsp vanilla
2 tbsp sugar
red coloring

blend all of the ingredients
{the blender works best for this}
allow the batter to rest for at least 30 minutes
{preferably an hour}

heat your crepe pan
{or medium sized skillet}
to med-high
melt a little butter in the pan
{I usually spread it with a paper towel}
pour batter {1/4 cup} and rotate the pan so the batter covers the entire bottom surface
flip once the edges begin to cook {30 – 40 seconds}
finish cooking the other side
slide the crepe onto a plate or a warming pan in the oven

finish cooking the remaining crepes in the same manner

while still hot, fill each crepe with 1 or 2 squares of dark chocolate {chopped}
fold in half, and then fold in half again
top with whipped cream and chocolate shavings
