Bread pudding has always confused me. It is most often served as dessert, but really isn’t it french toast casserole style? Bread, milk, cream, eggs, and sugar sounds exactly like french toast. That makes bread pudding a breakfast food in my book. But then again I eat turnovers and pie for breakfast too.

Whenever you decide to serve this bread pudding, for breakfast or  dessert,  it is sure to be a crowd pleaser. Breakfast casseroles are great for the holidays. They feed a crowd and can be made the night before. And since it is holiday time I wanted a breakfast casserole that felt a bit more indulgent. This raspberry and white chocolate breakfast bread pudding is exactly that. With the addition of White Chocolate and Raspberry International Delight Coffee Creamer  I turned ordinary bread pudding into an extraordinary treat perfect for breakfast or dessert.

Any sweet bread works well for this bread pudding. Brioche or Challah are my two favorites. I’ve also made this casserole with  Hawaiian bread and it was delicious as well. Use whichever bread you prefer. The cubed bread is tossed with fresh or frozen raspberries; I always use frozen.  Cover the cubed bread  in a mixture of eggs and International Delight Creamer. Then the casserole sits for an hour or up to overnight. The longer it can soak the better. Before baking I like to give it a sprinkle of freshly grated nutmeg, with a dusting of powdered sugar as it hits the table. Freshly whipped cream would make it a delicious dessert.

Ingredients:

Directions:

  • toss the cubed bread with the raspberries, and place in a greased 9 x 13 casserole dish
  • whisk together the creamer and the eggs and pour over the bread
  • cover and chill for at least an hour or overnight
  • to bake - preheat the oven to 350 degrees
  • dust with freshly grated nutmeg (optional)
  • bake 1 hour
  • serve warm with powdered sugar
