Do you ever hear about or see something, and then it is ALL you think about?

Joy the Baker made the most insane  rice pudding

and it is ALL I want to eat.

Rice pudding is something you either love or hate, and I am firmly in the LOVE group. It also is probably the most perfect of comfort foods, and I could really use that today.

I had an early morning meeting at Charlie’s school today. He has been trying SO very hard, but the work is simply not easy for him. In fact, it seems almost impossible at times.  It is painful for me to watch him struggle, so today’s meeting was a VERY emotional one.

In the end, we all agreed he needs extra support, and  now I need to bury myself in some pudding.

Quinoa Pudding with Maple and Cinnamon


  • 2 cups of whole milk
  • 1/4 cup of sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup of quinoa
  • maple syrup for topping {optional}


  • in a medium saucepan {over medium heat} combine the milk, sugar,vanilla, cinnamon, salt, and nutmeg
  • bring to a boil and stir in the quinoa
  • return to a boil, and reduce the heat to low
  • simmer {stirring occasionally} until the milk has been absorbed and the pudding is thick {20 - 25 minutes}
  • ** it may look like it is not thickeing up, but after about 10 minutes it should start getting thicker and more pudding like
  • serve warm with maple syrup


I only had brown rice in the pantry, and I was NOT waiting that long for pudding, so I decided to try quinoa.

LOVED it, and will quite possibly finish the pot for dinner.
