What are weekday mornings like in your house?

Here they can get pretty crazy.  My kids are in that “I need to look GOOD for school  phase”, and yet they also are in the “I hate to get out of bed phase” as well.  Those two things don’t exactly go together if you ask me.

For mom this means  “I need to get breakfast ready as quickly as possible”,  but I also think it’s really important that they eat a GOOD breakfast too. Again, two things that don’t always go together all that well.

Pancake muffins, with a  fully cooked Farmland sausage inside, bake  up fast, have protein to keep them fuller longer, and can even be made the night before {which makes them even faster in the morning}.

I think these  muffins are  a fun twist on the original pigs in a blanket, the kids just like them because they are delicious, and we are ready on time because even when made in the morning, they are ready in less than 30 minutes start to finish.


Quick and Easy Pigs in a Blanket


  • 1 1/4 cups of AP flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp maple syrup
  • 1 cup of milk
  • 3 tbsp melted butter
  • 1 egg
  • 6 fully cooked sausage links - Farmland {cut in half}


  • combine all the dry ingredients
  • whisk together the milk, egg, syrup, and butter
  • pour over the flour
  • whisk just until everything is incorporated
  • line a muffin pan {or butter well}
  • pour batter into liners
  • add 1/2 sausage link to each
  • bake @350 for 15 minutes
  • serve with maple syrup for fresh fruit topping
  • makes 12
