I absolutely love this time of year, but no matter how much I plan for it the weeks between Halloween and Thanksgiving pass in a flash. Then, the weeks from Thanksgiving to Christmas pass even faster. Stella and I are simultaneously planning our meals for Thanksgiving, her birthday celebration and then Christmas Eve dinner and Christmas. I love that she is really getting into the meal planning with me, but with the two of us, there’s a really good chance we will have entirely too much food at each meal.

Good thing the leftovers are my favorite part. I have always enjoyed a turkey and stuffing sandwich more than the main meal. A mashed potato bowl with cranberry sauce, and let’s not forget about my devotion to leftover pie.

Pie is always great leftover and Sara Lee ® Pumpkin Pie is good any time of day with it’s  warm comforting spices!.

Now you could easily eat said apple or pumpkin pie as is or with whipped cream. It’s fruit and dairy after all, making it a perfectly suitable meal for any time of day. Or…you could spice it up a bit and make this easy pumpkin pie parfait.

Ingredients:

  • for every parfait you need 1 piece of pie
  • 1/3-1/2 cup plain or vanilla yogurt
  • 3 or 4 Tbsp granola (pumpkin spice granola is what we used)
  • additional topping - whipped cream, chopped nuts, freshly grated nutmeg

Directions:

  • add 3/4 of the yogurt into the bottom of the glass or jar, followed by 3/4 of the granola
  • cut your pie into cubes, and add to the yogurt and granola
  • top your parfait with he leftover yogurt and granola or top with whipped cream and some freshly grated nutmeg

To cut the sweetness of the pie I made my pumpkin pie parfait with plain yogurt, but the kids love to use vanilla. Layer your yogurt, granola, followed by your pie, then top. I went with yogurt and more  granola. The kids simply cannot eat pie without the whipped cream, so that’s how they topped theirs. Either way, I could not think of a better way to wake up than with a delicious pumpkin pie parfait.
