There are some days that I am sick to death of pretty much all  the food; do you ever feel this way?

I mean it feels like I have made it all, and made it WAY too many times to count.

In other words I am bored. Even worse I think my kids are over it as well.

Don’t you just love when you work all morning to prepare a lovely breakfast, only to hear your children …”that again”, it doesn’t even matter what that is. It’s all been done before.

French toast rolls are by no means “new”, but they are new to us. A first, but definitely not a last, in the Kinnaird house.The rolls are  easy to make, and SO fun eat. What is it about eating with your fingers that make kids so dang happy?

I filled ours with pumpkin puree, but the filling options are endless

peanut butter and jelly is always a classic

apple butter or apple pie fulling YUM

cream cheese and fruit spread sure to be Stella’s favorite

nutella and berries, oh I need to try that  soon #makingmyselfhungry

Yield: 4 servings

Serving Size: 2 rolls

Ingredients

  • 8 slices of wheat bread, crust removed
  • 1/4 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 1/8 tsp nutmeg
  • 1/4 cup sugar, granulated
  • 1 tsp cinnamon
  • pumpkin puree, about 1/2 cup
  • butter for griddle or skillet

Instructions

  • pre-heat your skillet or griddle to medium heat, and brush with butter
  • roll each slice of bread with rolling pin to flatten, makes rolling much easier
  • spread with pumpkin puree, and roll tightly
  • in a shallow bowl whisk together the milk, egg, vanilla, and nutmeg
  • in another shallow bowl combine the sugar and cinnamon
  • dip each roll in the egg mixture, and then roll in the cinnamon sugar
  • place them on the griddle or skillet, turning to evenly brown the rolls, if using a skillet cook only 3 or 4 at a time
  • serve warm with maple syrup or powdered sugar
