I guess I’m a follower.

I had no intention of making anything pumpkin until October.
I was certainly not going to buy canned pumpkin when I have them growing in the garden.

Trouble is…my plants are not ready, and everywhere you look

I needed to make something pumpkin.
I am also in need of a lunch box dessert for the week.
Those cookies from last week did not live to see Saturday.

My kids are not straight up pumpkin lovers, but with chocolate they’ll pretty much eat anything.
So…I get my pumpkin fix, and they get a dessert.

Good thing because mean mommy sent them to school with no desert today:)

Pumpkin Cheesecake Brownies:
1 recipe of brownies {I used the Bakers one bowl recipe today}
minus the nuts
prepare brownies

Pumpkin Cheesecake Topping:
1/2 cup of pumpkin puree
1/4 cup of cream cheese
1 egg
2 tbsp sugar
1/2 tsp pumpkin pie spice

combine the cream cheese egg and pumpkin – blend well
stir in the sugar and spice

spread evenly over the brownies (you can marble the top – but I chose not to)
bake@350 for 35  minutes

cool and cut

I’ve said it a million times… bring on the fall weather.
