Well, don’t say I didn’t warn you.

Pumpkin season is here. Once you start it’s hard to stop; especially once you open the extra large can of pumpkin puree. You know I’m not going to let a single teaspoon of it go to waste.

and it’s been so long since I’ve shared bagels with you. Of  the bagels I’ve made these, these, these, and of course the blueberry that started it all, the pumpkin are easily my favorite.

They smelled SO good baking, that Ian couldn’t even wait until they cooled or had their pictures taken to dig in. Lucky for me they were as good as they smelled. Slightly sweet with hints of pumpkin, cinnamon, and nutmeg. All the best that fall has to offer.  Perfectly fitting for this first day of fall, and may I suggest enjoying a delicious pumpkin coffee with your bagel.

Pumpkin Bagels

Ingredients

  • 1 envelope of active dry yeast, I use Red Star
  • 1/4 cup of brown sugar
  • 3 1/2 cups King Arthur Bread Flour, you could also use AP flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/4 cup of very warm water {110 - 120 }
  • 1/2 cup pumpkin puree, not pumpkin pie filling

Instructions

  • combine all of the dry ingredients
  • add the water and pumpkin
  • stir to combine
  • knead the dough until you have a soft, smooth ball
  • cover and let rise until doubled, abut 1 1/2 hours
  • punch down and divide into 8 pieces
  • roll each piece into a smooth ball {the smoother the ball, the better looking the bagel}
  • press a floured finger into the center of each ball
  • place on a lined baking sheet, cover and allow to rise 30 minutes
  • bring a large pot of water to a boil
  • boil, no more than two at a time for 2 minutes - flip them over, if they don't flip themselves, after 1 minute
  • pre-heat the oven to 425
  • once boiled, place the bagels on the lined baking sheet and bake for 20 minutes - until golden brown
