Pumpkin Apple Cider Doughnuts
You can have your apple and your pumpkin too.
It seems that you are either team apple or team pumpkin.
When it comes to my fruit, {pumpkin is a fruit right?} I am an equal opportunity kind of girl. If it can be baked, fried, covered in sugar, cinnamon, or vanilla ice cream, I’m ALL in.
And when it comes to fried dough, yeah you really cannot go wrong,
so I added pumpkin to the cider doughnuts I was planning on making.
Ingredients
- 1 cup of apple cider
- 4 cups of flour
- 1 tsp pumpkin pie spice
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup of sugar
- 2 eggs
- 4 tbsp butter {melted}
- 1/2 cup of buttermilk
- 1 cup of pumpkin puree
Instructions
- over medium heat, reduce the apple cider to 1/4 cup {this will take about 10 minutes}
- combine the flour, spice, salt, baking powder, and baking soda
- cream together the eggs,sugar, butter, and pumpkin
- stir in the cider, and the buttermilk, alternating with the flour
- - you may need to add 1/4 - 1/2 cup more flour if the dough is too sticky
- heat oil for frying {make sure you have 2 - 3 inches of oil n the pot}
- until it reaches 350 {I always test by dropping a small ball of dough into the oil, when the oil is ready for frying, the dough will brown quickly, and float to the top}
- roll dough on a WELL floured surface {1/2 inch thick}
- cut into doughnuts
- fry only 2 or 3 at a time {about 60 seconds per side}
- drain on brown paper bags
- toss with cinnamon sugar
If you are old enough to remember shake and bake, that is the BEST way to coat the doughnuts 🙂
I’m pretty sure I just invented my new favorite fall food; hopefully my husband likes the smell of fried dough.

I love pumpkin donuts and I love cider donuts, so I can’t imagine how great those 2 flavors would be combined.

Doughnuts do take some work {I do not really enjoy frying} but every once in a while it has to be done 🙂
The holes were so yummy. But my doughnuts were really doughy inside. How do I fix that?
either the oil was not quite hot enough, or they just need more than a minute on each side. I burned a few, so don;t go much over a minutes before flipping. Also, the more you fry, the oil will cool down. Make sure not to crowd the pot. I did one or two at most at a time. All of these can affect how quickly they will cook. Unfortunately, it mostly is trial and error

I always use vegetable oil for frying
Can these be baked?
you could certainly try it but I have not baked yeast doughnuts before
