The boys just don’t get it,
but we are addicted.
Only, it is almost impossible to watch and not be hungry,
and I don’t mean hungry for a salad or some fruit.
We want red vines, and burgers, and don’t forget the pop-tarts.
I love pop-tarts,
Ian loves pop-tarts
of course the kids love pop-tarts,
but I’m the mean mom that won’t allow pop-tarts.
Ian will, from time to time, sneak them in the house, but for the most part, my poor kids are pop-tart deprived
These phyllo pastries (thank you kate @diethood for the amazing idea) are not exactly like pop-tarts, maybe more of a toaster strudel, but they are sweet, fruity, covered in delicious glaze, and unlike the box, I can pronounce every ingredient in them.
Perfect for valentines day breakfast, the pastries are filled with homemade strawberry jam that is a breeze to make. Just make sure to give the jam time to cool and thicken before assembling.
Phyllo dries out VERY quickly, so make sure you have everything ready to go before opening the package, and cover the sheets with a damp towel while you are working.
- for the jam -
- 4 cup of strawberries, hulled and pureed
- 2/3 cup sugar
- lemon juice
- for the pastries -
- 20 sheets of phyllo, thawed
- strawberry jam
- 1/2 cup (1 stick) butter, melted
- for the glaze -
- 1 cup of confectioners sugar
- 1 tsp vanilla
- 2 Tbsp milk
- in a large skillet, combine the berry puree, the sugar, ans a squeeze of lemon juice
- bring to a boil over medium-high heat
- continue to boil, stirring frequently, until the jam thickens (8 - 10 minutes)
- remove from the heat, and allow to cool
- pre-heat the oven to 375 F.
- line two baking sheets with silpat mats or parchment paper
- place one layer of phyllo on each baking sheet, brush with melted butter, top with another phyllo sheet
- continue the bottom layer, using a total of 5 sheets for each
- top the fifth phyllo sheet on each baking sheet with jam (you will use all of the jam) top with phyllo sheet, brush with melted butter, and repeat with the remaining 4 phyllo sheets
- before baking, cut the pastry on each baking pan into 8 pieces (for a total of 16 breakfast pastries)
- bake 12 minutes, rotating the pans half-way through the baking time
- while the pastries cool, make the glaze
- whisk together the confectioners sugar, vanilla, and milk
- drizzle the pastry once they are cool

The jam is SO easy to make, 10 minutes total, but your favorite jar would work just as well. Next time I need to make extra jam, because I could eat it with just a spoon,
and that is something I know Lorelai would approve
