Peanut Butter Truffle Cookies

Getting my children to eat good food is even more important to me.

As babies, both Charlie and Stella were a dream to feed.
They were always hungry.
Ate pretty much whatever we gave them,
and seemed to love it all.

Well, those days are LONG gone.

Charlie will eat what you give him, but you’ll typically get a side order of attitude.

Stella, well, she’s never really been one to do {or eat} something she doesn’t want to.

Of course, they are never fussy when it comes to sweets or snacks.

So, I figured, that if they are going to snack, I’ll try and make them as healthy as possible.

Lisa’s book is full of great ideas for getting kids to eat better.
I  thought I’d let Stella take a look and pick out some things that we could make together.
If she makes it she will eat it right?

She chose a cookie of course.
But, with only a handful of ingredients,
organic peanut butter being the main one,
they’re better than most.

These were gobbled up SO fast,
even the hubs went back for seconds.

Even better than that, I felt pretty good about the snack they were eating.

Maybe next time she’ll choose an actual main dish.

Peanut Butter Truffle Cookies
from petit appetit

1 cup of organic, natural creamy peanut butter
1 cup of brown sugar
1 large egg
1 tsp baking soda
1/2 cup of chocolate chips

preheat the oven to 350
line a baking sheet with parchment paper

in a large mixing bowl combine everything except the chocolate chips
gently stir in the chips
drop by tsp. onto the baking sheet

bake 10 minutes
** allow the cookies to cool completely before you remove them from the pan
{they will crumble}
