it doesn’t matter how old my kids get (currently they are 15 and 18), they still get excited to come home from school and find a plate of cookies waiting for them.  so as much as i love baking bread, the excitement over something as simple as cookies makes them my favorite thing to bake.

charlie still asks for a giant cookie for his birthday “cake”. typically we go for straight chocolate chip. this year i added peanut butter to the cookie and obviously it was a big hit. how can you go wrong with chocolate and peanut butter?

the only downside to a skillet cookie… my kids can eat the entire thing in one sitting. that’s  A LOT of cookie. plus, they load the cookie with ice cream. hello sugar coma commencing.

these peanut butter chocolate chip cookies use almost the identical recipe with a few tweaks to make them more cookie than cake-like, and are much easier to pack into lunches. that is if i can hide a few before the kids clean me out.

these are not peanut butter cookies with chocolate chips. they are chocolate chip cookies with peanut butter. trust me there is a difference. peanut butter cookies can be dry and crumbly. these are not at all. they are thick and chewy, and if you use chopped chocolate (and all those delicious shavings left over from the chopping) in place of the chocolate chips, they are loaded with gooey chocolate bits. chopped chocolate is the way to go if you ask me.

Ingredients:

  • 2 sticks (1 cup of butter) very soft
  • 1 cup of packed brown sugar
  • 1/2 cup sugar
  • 1/2 cup peanut butter
  • 2 eggs, at room temperature
  • 2 tsp vanilla
  • 2 1/4 cps flour
  • 1/4 cup malted milk powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups of chopped chocolate (with all the shavings) or chocolate chips
 

Directions:

  • preheat the oven to 375 degrees
  • line 2 baking sheets with parchment or silpat mats
  • in a large bowl combine the flour, malted milk powder, baking soda, and salt
  • in the bowl of a stand mixer cream together the butter and sugars on medium  until light and fluffy
  • stop mixer to scrape down the sides of the bowl, mix in the peanut butter, and then add eggs one at a time, followed by the vanilla
  • gradually add the flour, and  mix on low until combined, then fold in the chocolate
  • scoop dough (about 1 1/2 Tbsp) and place balls 2-3 inches apart on prepared baking sheets
  • bake 8-10 minutes (until lightly golden and the edges set)
  • cool on baking sheets about 5 minutes, then move to a rack to complete cooking
     

most days my kids come  home from school and head straight for their rooms, unless they walk in and  smell cookies. backpacks get dropped in the hallway and we all sit in the kitchen. cookies and milk cannot be any simpler, and yet these are some of my very favorite moments.

as long as my kids stay excited about homemade cookies, i’ll continue to get excited about baking cookies, and these peanut butter chocolate chip cookies have been on repeat in the kinnaird house.
