I almost missed it.

National Peanut Butter Day

I have had quite a week…
One kid was not feeling great
Migraine for me
and to top it off
Charlie got hurt at school and needed 7 stitches in his forehead.

Luckily, we don’t spend a lot of time at the ER.
In fact, we haven’t been since Charlie was a baby.

Just so you know,
if you are not dying
and not a baby
you get to wait
a
long
time

a really long time
like ALL day long.

After eating vending machine for lunch and dinner,
The over-the-top sweet peanut butter treat that I planned on making today,
will have to wait.

Between the chips, candy bars, and the 7 hours of sitting,
we were in need of some nutrition.

But, I did not want to miss out on all of the peanut butter fun,
so I made breakfast biscuits
with peanut butter
and because peanut butter  needs a partner,
some dark chocolate chips as well.

You just know it’s going to be a good morning when the kids think that you are giving them cookies for breakfast.

As long as I don’t have to sit in an ER waiting room today, it’s going to be a great day.

Peanut Butter Chocolate Chip Breakfast Biscuits
2 cups of whole wheat flour
{you could use half AP}
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon {this is optional – but I  LOVE cinnamon}
1 cup of buttermilk
1/2 cup of peanut butter
1/2 cup of chocolate chips

combine all of the dry ingredients and mix well
add the peanut butter and the milk
mix
stir in the chocolate chips

gather up the dough into a ball
and on a lightly floured surface roll out to about 1/4 – 1/2 inch thick
{I don’t actually measure}
cut using a biscuit cutter
{which I do not have yet}
or a glass
{which works just fine for me}

bake on a lightly greased baking sheet for 12 – 15 minutes @425

watch them closely…
I made a lovely batch of peanut butter hockey pucks this morning
