I love spending time in the kitchen, especially around the holidays.
We have been baking and candy making fiends lately.
But Christmas morning is a different story. I want to be cuddled up on the couch with my coffee watching the kids tear through wrapping paper, enjoying the lights of the tree while listening to Christmas music.
But one cannot live on Christmas candy alone, so breakfast has to happen at some point. This overnight pancake casserole is the perfect solution. Made the night before, all you need to do Christmas morning is add the streusel and pop it in the oven to bake. Breakfast will be ready and on the table before the last bits of paper have been cleared.
Ingredients
- pancakes -
- 2 cups of flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 Tbsp sugar - I use Wholesome Sweeteners Organic Sugar
- 2 cups of milk
- 2 eggs
- 4 Tbsp butter, melted
- 1 tsp vanilla
- Filling -
- 6 eggs
- 1 1/2 cups milk
- 1 cup cream
- 2 tsp sugar
- 1/8 tsp nutmeg
- Streusel -
- 1/2 cup flour
- 1/4 cup brown sugar - I use Wholesome Sweeteners Organic Light Brown
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 4 Tbsp butter melted
Instructions
- begin by making the pancakes - combine the flour, baking powder, salt, cinnamon, and sugar
- whisk together the milk, egg, vanilla, and butter
- pour the wet ingredients over the dry and whisk just until combined
- cook your pancakes using 1/4 cup of batter per pancake
- cut pancakes in half, unless you have a really deep casserole dish
- place them cut side down in layers - my casserole dish allowed me to have three pancake halves across, and I used every pancake half to fill the dish
- make the custard filling by whisking the milk, cream,eggs, sugar and nutmeg, and pour over the pancakes
- cover and refrigerate overnight
- in the morning, take casserole out of the fridge, and prepare the streusel - combine the flour, brown sugar, cinnamon, and nutmeg, add the melted butter and crumble
- pre-heat the oven to 350 degrees
- top the casserole with the streusel
- bake at 350 for 45 - 50 minutes - making sure the center is set and fully cooked

I made this for. 9×13 pan but all the pancakes pretty much layer flat – not upright like your picture. Does it need to be in a smaller pan? Does it make a difference? Thanks so much

I can’t wait to surprise my hubby with this. He loves pancakes, over night french toast, and coffee cake and I think this will be a hit. I already have a pancake recipe I love so my question is about how many pancakes do you use? TIA
off hand, I cannot remember the exact number – if your pancake recipe resembles mine in proportions, I’m sure it would be fine. but if it makes only 8 – 10, you will probably need to double it
OK, great Thank you! I have a mix I make a big batch of and then use a 1:1:1 ratio of mix, milk and egg. Kids wouldn’t let me make pancakes without them eating so I think I have made at least 40 this am and should have plenty over as well. Just wanted to get an estimate for the recipe. How big is your casserole dish? A batch of pancakes made with this recipe doesn’t really fill a nine by thirteen casserole, and I don’t have a smaller one. Or maybe I’m doing something wrong.
I am pretty sure that was the size I used, if you cut each pancake in half, there were plenty to fill the entire dish

We just had these this am for our New Years Day Brunch. This is going to be the start of a new tradition! My 1 year old DEVOURED these! Don’t judge!!! She had plenty of green veggies as the day progressed…LOL!

Made this but changed it up a bit, followed recipe, but instead of adding streusel topping right away, I first added cherry topping, blueberry topping, spiced apple topping, peach topping and let it bake 1/2 hr like that, then added the strudel topping so it would get hard and dried out. 50 minutes is too long for the topping to be on, the last 20 min for that topping is fine

Can you use frozen pancakes instead of making your own. If so how many would it take?
i have never tried this with frozen pancakes, i’m sorry. but you would need enough to fill the casserole dish (not sure how large the frozen ones are
At what point would this be frozen? Immediately after assembly or after it has soaked overnight. When baking from the frozen state would you have to thaw first?
i have never tried freezing this -but i would suggest baking first, then freezing. Then just defrosting and warming in the oven
