Don’t you love when a kitchen experiment works out?  I spend so much time on the computer, that food and recipes ideas FILL my brain. That being said, I usually only  look at the dish, and not really focus on the ingredients or the recipe. If it looks good,I’ll  try to recreate  it. Not always the easiest to do when you haven’t actually read the recipe, and my poor husband pretty much eats it anyways without complaint.

This time however, my little experiment worked.

You can actually make pasta in one pot with NO straining or draining needed.  Simply throw everything in,cover and cook.  In ten minutes your dinner is done. Simple as that. The best part… you can use whatever veggies and/or meat you have at home.

One Pot Linguine with Tomatoes, Red Peppers, and Chard

Ingredients

  • 1 lb linguine
  • 1 onion {diced}
  • 4 cloves of garlic {minced}
  • 1 can of diced tomatoes
  • 1 bunch of chard {roughly chopped}
  • 1 large red or orange bell pepper chopped
  • 1/2 pound shrimp {optional}
  • 4 cups of stock {I used vegetable stock}
  • salt/pepper to taste
  • freshly grated Parmesan for topping {optional}

Instructions

  • Here's the easy part - put everything up to the stock in a large pot
  • pour the stock over the rest of the ingredients
  • cover and bring to a boil
  • stir, reduce heat, cover, and simmer {stirring every few minutes} for 10 minutes
  • before serving make sure you give one final good stir to mix any of the remaining liquid into the pasta
  • top with cheese {if using}
  • and serve

You can mix up the veggies you add, and next time I think I may just add a bit  of white wine and crushed red pepper for a little heat.

Whatever you decide to add to  your pasta, a meal that only takes 10 minutes to get on the table is a WIN!
