I was so focused on Thanksgiving, that Christmas has gone and snuck up on me yet again.

That and my daughter’s birthday and party are next week.

Frantic pretty much sums up how I feel right now.

I’ve been in holiday baking mode, and strangely my family is not into eating said baked goods for dinner, well except for Stella, that girl has got a major sweet tooth;  the rest of them actually expect a meal.

Enter the one pan wonder. I am all about the one pan or one pot meal. If it weren’t for the one pan meal, my family would be eating gingerbread coffeecake and chocolate cookies for dinner.

This meal is about as easy as it gets; I cut the veggies while I had cookies baking, added the chicken, popped it all in the oven, and an hour later dinner is ready. Add a salad and you have a  complete meal that looks as impressive as it tastes.

Ingredients

  • 2 Tbsp olive oil, divided
  • 2 tsp salt, divided
  • pepper (to taste)
  • 1 pound small rainbow potatoes (gold, red, and purple)
  • 4 large carrots (I also used rainbow carrots) cut into thirds
  • 1 red onion, sliced
  • 2 cloves of garlic, minced
  • 4 chicken breasts
  • 1/2 cup cream
  • 1 Tbsp Dijon mustard

Instructions

  • heat the oven to 450 degrees
  • toss the potatoes, carrots,onion, and garlic with 1 Tbsp of olive oil and 1 tsp salt (pepper to taste)
  • arrange the vegetable in your baking pan
  • rub the chicken with the remaining olive oil, salt, and pepper
  • place chicken breasts on top of vegetables
  • bake 45 minutes
  • remove the chicken from the pan
  • whisk together the cream with Dijon, and stir into vegetable and the pan juices
  • place chicken back into the pan, and bake an additional 5 - 6 minutes
  • serve chicken with vegetables and top with the pan sauce
