can a Wednesday morning feel like a weekend morning?
it can if there are nutella + raspberry muffins on the table
it happens to me EVERY year at right about this time;
I have summer fever.
I cannot wait for summer vacation.
I am over the hours of homework every night.
Over the projects, printouts, and tests.
It’s SO much fun when your kids each have two tests every Friday; I feel like we are a crazy quizzing factory over here. Those of you with more than two kids, I don’t know how you do it.
I’m also over having to d r a g the kids out of bed each morning, while rushing around the kitchen to get breakfast on the table.
Stella especially is a hard one to get out of bed, she loves her sleep. I have found one sure fire way to wake her up…
The girl will pretty much do anything for nutella, even if that means getting out of bed early.
If she had her way, breakfast every day would be crepes with nutella and berries, I can’t really say I blame her. Crepes with nutella are delicious,
but crepes before school only happen on birthdays.
Muffins on the other hand are perfect for weekdays. Stella gets her nutella and berries, and I get to sleep in a few extra minutes knowing breakfast is ready when we are.
Charlie’s just happy he doesn’t have to eat cereal
- 6 Tbsp butter, melted
- 1/3 cup milk
- 2 eggs
- 1 tsp vanilla
- 1/2 cup sugar
- 1/2 cup nutella
- 1 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups of raspberries
- coat muffins tine with non-stick cooking spray
- pre-heat the oven to 375 F.
- whisk together the melted butter, milk, eggs, vanilla, sugar, and nutella
- stir in the flour, baking powder and salt
- gently fold in the berries
- divide batter evenly among the muffins tins (cups will be at least 3/4 full)
- bake @375 for 18 - 20 minutes
- cool in pan 10 - 15 minutes, then remove to a rack to complete cooling
