{no cook} Chocolate Chia Seed Mousse

It’s Thanksgiving week,
and I have been enjoying the holiday break from our busy school schedules.

I do however have a small bit of advice for those  with kids at home as well;
ready…do not take them shopping with you.

Not only are the grocery stores a mob scene,
but there are sweet treats on the ends of every single aisle.

We have to make this …

I was ready to scream.

Halloween is just behind us,
{can you say candy crash}
and I know this weekend will be FULL of desserts,
so I really was not planning on making anything sweet.

BUT…
I don’t like to always be the bad guy

I decided to compromise with
a quick, no-cook
healthy chocolate mousse

Chocolate Chia Seed Mousse
1 can of coconut cream {Trader Joes}
1/2 cup of unsweetened cocoa powder
1/4 cup of chia seeds
1/4 cup of honey or agave
1 tsp vanilla

blend the coconut cream {the water and cream will have separated in the can}
mix in the remaining ingredients and blend well
chill for 2 – 3 hours

when you are ready to serve, simply whisk it a bit to get a lighter texture
I even topped it with a few chocolate pomegranate seeds

Delicious, dairy free, and a desert I can feel good about eating
