{no bake} Monster Cookie Granola Bars

I did it!

This was my first year as the mother of a middle schooler,

and I made it through ALL of the projects.

{and there were quite a few}

This week alone there was making a photography disc with iphone pictures, a power point presentation for speech, and the country report display.

{Charlie chose Nigeria…not the easiest to build if you ask me}

The final project was turned in today,

and I am breathing SO much easier.

BUT…we do still have 12 days of school remaining,

which means that I am in need of lunch box ideas for 12 more days.

One of my favorite lunch box treats are granola bars.

 

{no bake} monster granola bars

 

Because I was feeling festive today,

{no school projects for at least 4 months does that to me}

our bars got m&ms

but not just any m&ms

peanut butter m&ms,

and since the m&ms are peanut butter,

then the granola bars should get peanut butter as well.

If there’s peanut butter, then you may as well add a bit more chocolate.

{okay so these may not be the healthy sort of granola bars}

but they sure are good!

{no bake} Monster Cookie Granola Bars

Ingredients

  • 2 cups of rolled oats
  • 1 cup of crisped rice cereal
  • 2/3 cup of honey {of agave, or maple syrup...just something STICKY}
  • 2/3 cup of peanut butter
  • 2 tsp vanilla
  • 1/2 cup of m&'s - I used a mix of m&ms and chocolate chips}

Instructions

  • combine the oats, and the rice cereal
  • add in the peanut butter, honey and vanilla
  • mix until everything is thoroughly coated
  • spoon into a square baking dish
  • add the m&ms
  • press firmly in to the pan
  • let the bars rest for at least 30 minutes before cutting
  • {cooling in the fridge also works well}
