I am fortunate that I get to work from home. I take the kids to school, pick them up from school, I am there to help with homework, and more often than not never have to put on “real” clothes. I love it.

This does however lead me to overestimate the time I actually have for things other than work during the day.  I’m always so optimistic early in the day, and tend to start way more than I can finish.

Yesterday I had grand plans to make not only a fantastic dinner but dessert as well. Homemade ice cream sandwiches. But the weather was picture perfect, and a morning spent outside led to a mad dash to finish things up before Ian and the kids got home. This meant no cookies got made for the sandwiches.

I had already dipped the strawberries but I knew the kids would be upset if there wasn’t something else for dessert. That’s where this easy no-bake baileys chocolate cheesecake mousse comes in. 30 minutes and dessert was done.

I may not be much of a dessert lover, but cheesecake mousse with fruit is one of my favorite foods. I could eat it all day every day. The kids love it too, but chocolate is what they love most. So I made chocolate cheese cake mousse for them. Ian and I got a little something extra in ours…it was valentines day after all.

Ingredients:

  • 2/3 heavy cream
  • 3/4 cup powdered sugar, divided
  • 1 - 8oz. block of cream cheese
  • 1 tsp vanilla
  • 2 Tbsp Baileys Irish Cream
  • 3 ounces of dark chocolate, chopped and melted
  • 1 cup of chocolate graham cracker crumbs

Directions:

  • beat the cream until it begins to thicken, add 1/4 cup powdered sugar, and whip until stiff peaks form, cover and chill
  • beat the cream cheese until smooth, add the remaining powdered sugar, vanilla, the melted chocolate and baileys irish cream, beat until well mixed
  • gently fold in the whipped cream - stopping when everything is combined
  • store covered in the refrigerator until ready to use
  • to serve, place cracker crumbs into the bottom of each bowl, top with mousse
  •  I find that piping into dessert dishes makes for a nicer presentaion

cheesecake mousse is delicious all on it’s own, but this time I added chocolate graham cracker crumbs into the bottom of each bowl, this really adds to the cheesecake taste. the crust was always my favorite part. but if you don’t have any graham crackers at home, don’t worry … no-bake baileys chocolate cheesecake mousse is just as delicious without.
