mini chocolate chip cookies


  • 1 1/4 sticks butter, softened
  • 2/3 cup brown sugar
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1 1/2 cups mini chocolate chips


  • pre-heat the oven to 400 F.
  • cream together the butter and sugar, add salt and baking soda
  • beat until light and fluffy (3-4 minutes)
  • add egg, and vanilla, and mix until incorporated (scraping down the sides of the bowl)
  • add flour and mix just until combined
  • fold in the chocolate chips
  • drop dough but the 1/2 tsp onto a parchment lined cookie sheet
  • bake 5 - 6 minutes
  • cool cookies on rack

I have seen mini cookies that were piped onto the baking sheets, and I don’t now how they do it, because I could not make it work. Scooping by the 1/2 tsp takes time, but in the end the cookies were worth it.
