I look forward to weekends more now than I ever did as a kid.
I’ve said it before, but I am the exact opposite of a morning person.
Sure, I get up and moving as soon as the alarm goes off. I’m not the snooze button type at all. If I’m up, I’m up, but that doesn’t mean I like it.
And don’t even think about talking to me before coffee.
Weekends we like to stay up late and sleep in. Alarm clocks are not welcome. Some may consider it frivolous, but it’s not uncommon for us to sleep until 9 on Saturdays and Sundays, and the kids sleep even later.
And weekend breakfast is a main event.
If it were up to me, I’d make eggs and bacon pretty much all weekend every weekend, but Stella has a serious sweet tooth and would live on pancakes and waffles if allowed. I can’t really blame her, even without a major sweet tooth, I could eat pancakes and waffles morning, noon, and night.
These maple bacon waffles are the best of both. A little sweetΒ from the addition of pure maple syrup (yes, use the real stuff), a little savory from bacon baked right in the waffle, and 100% delicious because it’s maple and bacon, and you didn’t have to set the alarm today. I’m convinced that everything tastes better when there’s no alarm clock involved.
** I cooked the bacon on the waffle iron, adding extra bacon flavor to the waffles, but you could pan fry or bake the bacon as well.Β
Ingredients
- 6 - 8 slices of bacon
- 2 Tbsp butter, melted
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 Tbsp pure maple syrup (plus more for serving)
- 1 cup of milk
- 1 egg
Instructions
- pre-heat your waffle iron
- cut bacon into pieces small enough to fit across your waffle iron, I cut each piece of bacon into thirds
- cook bacon on the waffle iron, 2 pieces per section (my iron has two sections), close lid and cook 2 minutes, rotate the bacon, close lid and cook another minute or two to your desired crispness
- lay the bacon on a paper towel to absorb the grease, and drain excess grease from thewaffle iron
- to make the waffle batter, whisk together the flour, baking powder, and salt
- in another bowl whisk together the milk, egg, syrup and the melted butter
- pour the wet ingredients over the dry, and mix just until combined
- pour 1/2 cup batter (or what is recommended for your waffle iron) and spread almost the the edges
- place 1 or 2 pieces of bacon in the center of each waffle
- close the lid, and cook until browned and crisp
- waffles can be kept in a 200 F. oven while you complete the remaining waffles
coffee + maple bacon waffles + lounging = perfect Sunday morning

Like you, I’m not much of a morning person… but I enjoy them more now than I did as a kid. And I’d totally get out of bed (and maybe even be cheery!) for these Maple Bacon Waffles. What a brilliant combination of sweet and savory. Whenever I end up getting a waffle iron, these babies are happening in my house!

I am not a morning person and I’m totally the type to hit snooze. Actually, my hate of getting up early is worse than the snooze button. I have three alarms set on my phone – 1 for 6am, one for 6:30 and one for 7. Guess what time I get out of bed? LOL! I always say I am gonna get up at the first alarm but I never do. π
Now if these waffles were waiting for me, I’d have some incentive to get out of bed!
