It’s back to school time, and as much as I love our relaxed summer evenings, I really am looking forward to getting back to a normal schedule.

Let’s face it, sleeping in and staying up late are fun, but so is working in a  nice  quite house. I’m actually getting a little giddy thinking about it. It’s been a long time since this house and seen peace and quiet.

 

Back to the getting up early part, I’m not really excited about that. Have you ever tried rousing a teenager…it’s not easy. At least this year my plan is to have a well stocked pantry making breakfast and lunch making a breeze.

Pancakes are my kiddos favorite breakfast. They don’t take that long to get together in in the morning, but when your mix is ready to go, they are even faster.

In the morning all you need to do is add 2 Tbsp melted butter, and egg, and 1 cup of milk to 1 cup of the pancake mix, whisk and you’re good to go. I know not everyone is a whole wheat fan, so feel free to sub in AP flour, but we love them as is.

Ingredients

  • 2 cups of AP flour
  • 2 cups of whole wheat flour
  • 1/2 cup sugar
  • 1 Tbsp plus 1 tsp baking powder
  • 1 Tbsp salt
  • 1 Tbsp cinnamon {optional, but delicious}

Instructions

  • whisk ingredient together, and store in an airtight container
  • to make pancakes - whisk together 2 Tbsp melted butter with 1 egg and 1 cup of milk {optional 1 tsp vanilla}
  • pour wet ingredients over 1 cup of pancake mix
  • whisk only until everything is incorporated -{ there will be lumps}
  • drop by 1/4 cup onto griddle
  • cook until tiny bubbles appear on the surface, flip and cook until the pancake is cooked through
