Homemade Mounds Candy Bar

I know that everyone has moved past all the Halloween candy
right into the Thanksgiving and Christmas treats.

I’m ready for Thanksgiving.
It is quite possible my favorite day.

What could be better than celebrating all we have to be thankful for with food.

BUT…this Halloween
as I quietly raided my kids buckets
I was disappointed that there were VERY few
Mounds and Almond Joys

I wait ALL year for those little bars.

Today…I made my own,
and I don’t even have to share
because my family does not like coconut!

All you need:
1 cup of un-sweetened shredded coconut
1/4 cup of agave or honey
1 tablespoon of melted coconut oil
and about 3/4 cup of chopped dark or bittersweet chocolate

in the bowl of a food processor – pulse together
the coconut
the oil and
the sweetener

form into small “mounds”
freeze for at least 10 – 15 minutes

melt the chocolate
and coat the frozen mounds

place back in the fridge to harden

That’s all there is to it.
If I had almonds at home – I would have added those as well.

My bucket raiding days are behind me.
