Homemade Cocoa Puffs

Cocoa Puffs are one of those childhood foods that I can’t seem to outgrow. I can easily eat a box myself in a single seating,
{not that I am speaking from experience}
but I know that it’s not the breakfast of champions, and we eat them rarely.
Oh, but they are good, so I wanted to try a homemade version.
For some reason, chocolate seems appropriate for breakfast if it’s homemade.
Now I know these are not exactly like the original, but I can pronounce every single ingredient in them, and a small bowl will fill you up!
AND…they’re chocolate ๐
Ingredients
- 1 cup of flour
- 1/4 cup of cocoa powder
- 1/4 cup of almond meal
- 1/2 tsp salt
- 1 egg white
- 1 tsp vanilla
- 1/4 cup honey
- 1 tbsp Greek yogurt {or coconut oil}
Instructions
- in the bowl of a stand mixer combine all of the ingredients
- it may appear as if the dough is too crumbly, but it will come together
- pinch off just a bit and roll into balls {about the size of a blueberry}
- bake @375 for 15 minutes
- allow to cool completely before storing in an airtight container
- the puffs will keep for about a week
The puffs are very chocolaty and slightly sweet; if you like a sweeter cereal simply add a few tablespoons of sugar to the dough.
I should ย have made a larger batch, because these didn’t ย live to see morning.

Oh my goodness! I just started a healthier healthy diet and these have things that are good in them! Wow! But I LOOOOOVE Reeces Puffs … suggestions for making a peanut butter version too?
combine everything – except the cocoa powder
divide the dough in half
add 2tbsp cocoa to one half
and then 2 tbsp pb to the other
bake according to the recipe

Is it possible to make these without almond meal? It’s the only ingredient I don’t have yet.

Have you tried using whole wheat flour? Either pastry or white whole wheat.
I haven’t , but I’m sure it would work

I made these, they don’t taste like cocoa puffs but they are a nice snack. Imwill try the peanut butter version next.
I mentioned in my post that they don’t taste like the store bought, mainly because I wanted them to be a healthier alternative. You could certainly add sugar and leave out the almond ; this would give you a sweeter puff that was not as dense.

I use it to make the cereal without any other added fat – but you could try it without – replacing it with butter or oil

I made these but used half whole wheat flour and half Unbleached white flour and followed the recipe exactly. Are yours heavy? Hard? Maybe I cooked for too much time. I want a way to fluff them up. Any ideas? I love that you have shared this recipe.
whole wheat flour will of course make them heavier, it has a completely different texture than white flour, and a shorter cooking time will help with them being too hard – everyone’s oven cooks at a slightly different temperature.
Can I use something besides almond meal?
you could try oat flour or corn flour to still stay away from whet, but I have no idea how they would turn out

I would think so, if you could find fruit flavors in place of the chocolate. but I have not tried anything like that
