Remember that adorable little circus train box?

When they came out with the limited edition Lily Pulitzer boxes, I bought every box I could find.

They are a staple of american childhood. I think we always had a few boxes in the cupboard when I was a kid. When Charlie and Stella were little, we never, and I mean never, boarded a plan without a few boxes in our activity bags.

But, you know me, if  it can be bought, I’m going to try and make it myself, like these homemade doritos. To me homemade just makes more sense. Sure it takes longer than simply opening a package, but I like to know what I’m eating, and more importantly what I’m feeding my kids.

My version, just like the original,  is sweeter than a cracker, probably similar to a graham, but not nearly as sweet as a cookie. I thought the animal shapes would be too “young” for my tween and teens, but they loved them. I did make some other shapes as well, but they went straight for the animals. Cut them any way you want, they are a delicious snack for lunch boxes or after school snacking.

I don’t have too many small animal shaped cookie cutters, so some of mine are larger – just make sure that you place similar size crackers on the same baking sheet. Baking times will vary depending on the size of your crackers.

My smallest shapes took about 8 minutes, and the larger ones I left in for 10 or 11 minutes. Just make sure to check them for browning.

To ensure that they don’t spread while baking, I placed the baking sheets in the freezer while the oven pre-heated – this only took a few minutes, but the crackers held their shapes perfectly. I strongly advise a quick chill before baking, especially if your kitchen is warm.

We left our crackers plain, but you could take them a step further by dipping them in Candy Melts and adding some sprinkles;  you’d have some really festive circus animals.

Homemade Animal Crackers

Ingredients

  • 3/4 cup butter {12 Tbsp}
  • 1/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/8 tsp nutmeg
  • 2 cups flour

Instructions

  • cream together the butter and sugar
  • add eggs, and vanilla
  • combine the salt, baking powder, nutmeg, and flour
  • add to the butter, sugar, and eggs
  • mix until everything is incorporated
  • on a lightly floured surface roll dough to 1/2 - 1/4 inch thickness
  • cut into desired shapes
  • place similar size shapes on a lined baking sheet
  • place sheet{s} in the freezer
  • pre-heat oven to 350
  • once pre-heated, remove the sheets form freezer and bake
  • 8 minutes for small shapes, 10 - 12 for larger
  • remove from oven and cool on racks
