i’m not sure if it’s because i’m outside more gardening and playing with moe and the chicks. or if it’s because the weather is warm but not too hot and i have been walking my errand list every day. more likely it’s because our summer vacation includes 10 days at the beach in south carolina and i’m stressing over bathing suit season.

whatever the reason i have been wanting to snack. a lot. and one thing i know about myself is that i will snack on anything that is readily available, healthy or not.

a few moths ago i found this great silicone single portion microwave popcorn popper popcorn with trader joes everything but the bagel seasoning has been my snack obsession lately. i eat it practically every day (2 cups for only 2 ww points).

i usually favor salty over sweet when it comes to snacking. french fries and chips with guac are my weakness. unless of course i have a batch of sarah kieffer’s  famous pan banging chocolate chip cookies  at home. they are addicting.

for the last week or so i find myself wanting something sweet after lunch. i’ve tried an apple or banana with almond butter, but that’s not cutting it. i will make this microwave banana bread on occasion, but sometimes even a few minutes is too long to wait. i need a snack that is ready to go when the craving hits.

these healthy cookie dough bites are the perfect post lunch snack or afternoon pick me up. they are sweet without the need for refined sugar. they are dairy free, gluten free, and contain only 5 ingredients. raw cashews, dates, vanilla, and cacao nibs and just a dash of salt to balance the sweetness of the dates.

Ingredients:

  • 2 cups of raw cashews
  • dash of sea salt
  • 12 medjool dates, pitted
  • 1 tsp vanilla
  • 1/2 cup cacao nibs
 

Directions:

  • in the bowl of a food processor fitted with the s blade, pulse the cashews and salt until finely ground
  • add the dates and pulse until they are chopped and evenly distributed into the cashew meal, then add vanilla and pulse a few times making sure everything is combined
  • stir in the cacao nibs and then scoop onto a parchment lined baking sheet (my Cookie Dough Scoop is 1 1/2 Tbsp)
  • freeze bites until firm (30-60) then transfer to a freezer safe airtight container and keep in freezer
 

** if you prefer use mini chocolate chips in place of the cacao nibs

honestly, the kids were hesitant to try them. dates and nuts are certainly not what they think of when it comes to snacks. after some convincing on my part, they reluctantly each tried a cookie dough bite. now, i’m not saying they would choose a raw bite over a baked cookie, but they did like them.

for me, not snacking is not an option. having a variety of guilt free and easy snack options available (that aren’t carrot stick and apple slices cause those get BORING) has made sticking to a healthy eating plan completely doable.
