I’m letting it all  hang out today

{so to speak}

When I turned 40,

I was in pretty good shape.

I was running everyday,

and had just completed my first half marathon.

I don’t consider myself a vain person,

but I thought I looked pretty darn good for a 40 year old.

Now here I am,

about to turn 43,

and …well…

mother  nature  has not been on my side lately.

I am still running 5 days a week;

however,

I have discovered that my tummy, has a little extra jiggle lately.

My jiggle seems to like its home, because no matter what, it doesn’t appear to want to vacate the premises.

I have decided that

I’m not going down without a fight though…

And while I will never “diet”

my churros will be a bit healthier this year.

{healthier} Baked Churros

Ingredients

  • 1 cup of water
  • 1/2 cup of coconut oil
  • 2 tbsp sugar
  • 1 cup of flour
  • 1 egg
  • 4 tbsp melted butter
  • cinnamon and sugar for topping

Instructions

  • heat the water and coconut oil over med-high heat
  • once the coconut oil has melted, add the sugar and flour
  • stir until the dough pulls away from the sides
  • {about 2 minutes}
  • remove from the heat
  • stir in the egg until it is well blended
  • fill a pastry bag fitted with star tip {Wilton #21}
  • and pipe onto a parchment lined baking sheet
  • bake @350 for 15 - 20 minutes
  • brush with melted butter and sprinkle with cinnamon and sugar
  • {I used my cinnamon and sugar grinder from Trader Joe's}
