We made it. Yesterday was Charlie’s birthday and the end to our crazy holiday-birthday season that starts with Thanksgiving. This year was even crazier with moving;  it has been fun, but with two parties and three sleepovers in the two weeks that we’ve been in the house, I am straight up exhausted and SO ready to get back to a normal schedule.

With the exception of volleyball and a basketball game, I’m hoping this coming weekend involves a whole lot of nothing.

Even our meals this week are as easy and low maintenance as possible. Easy three ingredients mac and cheese, sheet pan fajitas, and for breakfast these easy ham and egg cauliflower rice bowls. I love cauliflower rice, but with my relic of a food processor it takes forever and makes a huge mess, so I don’t make it very often.

That has now changed with my new Hamilton Beach® Professional 14 Cup Dicing Food Processor ; an entire head of cauliflower took less than a minute and only a few pulses to process into rice, and when topped with some ham or Canadian bacon and an egg makes a fast, easy, and most importantly, delicious breakfast. This food processor is also great for making bread which I do ALL the time, dicing veggies for salsa and soups, and slices potatoes like a dream (no more sliced fingers on my mandolin)

Ingredients:

  • 4 thick slices of ham or Canadian bacon
  • 1 head of cauliflower
  • 4 eggs
  • 2 Tbsp olive oil, divided
  • salt and pepper to taste
  • topping - diced tomatoes, fresh herbs, hot sauce (optional)
 

Directions:

  • wash and dry cauliflower, and cut into smaller sections
  • place sections into the food processor fitted with the chop/puree blade
  • pulse a few times util the cauliflower is rice-size
  • in a large skillet over medium heat, add 1 tsp oil
  • add Canadian bacon or ham and cook 2 minutes then flip and cook 2 minutes more
  • remove from pan and dice, set aside
  • add 1 Tbsp oil back to the skillet
  • add cauliflower rice to the skillet, and cook until the "rice" softens (about 5 minutes) and season with salt and pepper
  • in a large non-stick skillet heat remaining  oil over medium heat, crack eggs into skillet, add salt and pepper
  • cook eggs until the whites are set (about 3 minutes)
  • divide cauliflower rice among 4 bowls, top with 1 slice of diced ham or Canadian bacon, 1 egg and additional toppings if desired

I added some fresh diced  tomatoes to my ham and egg cauliflower rice bowls, and if you have them, chives are a great addition as well. Hot sauce is a must for me when eggs are involved, and Ian loves garlic in his cauliflower rice, me not so much. These cauliflower rice bowls are delicious with bacon too. That’s the beauty of the cauliflower rice bowl, they are completely customize-able, a great way to use up what you have on hand, and an easy way to squeeze veggies into your breakfast.

Now that I have a food processor I love, these ham and egg cauliflower rice bowls are going to happen a lot more often.
