Grilled Fresh Mozzarella with Roasted Tomatoes and Basil

For me, this is exactly what summer tastes like.

Even though I could eat it everyday, and trust me, we have.

{mozzarella, tomato, and basil on Triscuits has been our go-to summer lunch/snack}

Sometimes, you just need to mix it up a bit..

This summer, we have been grilling on slate.  Steak, scallops, veggies. You name it, and we have grilled it on our slate slab.

So, as we were getting ready to enjoy our pre-dinner “snack” of cheese and tomatoes, I decided to try and grill the tomatoes.

Then I thought, why stop at the tomatoes, let’s try and grill the cheese.

Yes, you can grill cheese {using a slate slab}, and it is amazing.

Add the grilled tomatoes, basil, and a drizzle of balsamic, and you have caprese 2.0.

Here’s what you’ll need:

1 slate tile {from the outdoor tile section}

rinse it in water only

place the tile on the grill and let it pre-heat for about 15 minutes

lightly brush the tile with olive oil

toss a pint of heirloom cherry tomatoes with 1 Tbsp of olive oil and a pinch of coarse sea salt

grill them on the slate until they begin to burst open {about 10 minutes}

remove the tomatoes, and place a ball of fresh mozzarella on the slate

grill just until the cheese begins to melt {this won’t take long}

remove the cheese

top with the tomatoes

basil leaves, and just a tiny drizzle of balsamic
