Grain Free Pumpkin Muffins

We are muffin fans.
No questions about it.
Yes,I am aware they are essentially cupcakes, but I love them just the same.
Blueberry, Mint chocolate Chip, Hot Chocolate, even Pancake muffins
all good, but it’s fall and that calls for pumpkin.
The kids are not crazy pumpkin fans, but when you add a few chocolate chips, the muffins disappear. Since I’m doing the no grain thing for a bit, I figured muffins were out, but that is not the case. I found PLENTY of recipes online {like this one here} and took bits from the best to create a moist, delicious, and dare I say, my favorite pumpkin muffin recipe yet.
I had NO idea how they were going to come together, but magically they did. They are much lighter than your typical muffin with all of that great pumpkin spice taste.
Ingredients
- 1/2 cup of coconut flour
- 1/2 cup of almond butter
- 1/2 cup of pumpkin puree {not pie filling}
- 2 eggs
- 1/4 cup raw honey {or maple syrup}
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1/4 cup chocolate chips {if using}
Instructions
- pre-heat the oven to 350
- line your muffin tin {using paper or parchment liners}
- combine all of the ingredients, except the chocolate chip, and stir until everything is well blended and you have a smooth batter
- fold in the chocolate chips
- pour the batter evenly in the muffin tin
- bake until done {about 20 minutes}
- cool
If you don’t have coconut flour you can use all almond butter {I used my homemade honey roasted almond butter} but I really enjoyed the hint of coconut.
To make your own pumpkin pie spice {which I really should do more often} combine 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 tsp ground ginger.
