I may be sharing a bit too much information, but…wheat and I don’t always see eye to eye. It hasn’t always been this way. You know how I feel about bread; it’s one of my most favorite things to eat and bake. Lately however, I’ve noticed my stomach doesn’t always appreciate when I eat said bread, or pizza or pasta, even crackers cause a mild ruckus.  {have I shared too much}

Basically, I just feel better when I don’t eat wheat…to me this is a HUGE bummer, but I want to feel good. I also LOVE snacking in the summer.

One of our favorite snacks happen to be fruit with cheese and crackers. I could eat just the fruit and cheese, but what fun is that. I wanted to come up with a cracker that was wheat free, but also one that was a good for you snack. I’ve done a lot with almonds in the past, but the nice people at California Walnuts loaded me up.

For my crackers I used walnuts, almonds, and flax, but you could totally switch it up. Next time I m going to try macadamia nuts, or hazelnuts.

I sprinkled a few poppy seeds on top before baking, but that was more for looks than anything else, and you could absolutely leave them off. Don’t leave off the sea salt…it’s delicious.

The crackers are good on their own, but topped with a little fresh ricotta, or my new BFF burrata, they are even better. Because the crackers are  made with only healthy ingredients, you don’t have to feel bad about snacking. Plus these are ridiculously easy to make,ready in under 30 minutes, and you probably have everything you need already at home.

Gluten Free Nut Crackers

Ingredients

  • 1 cup of walnuts
  • 1/4 cup of almonds
  • 1/4 cup of flax seeds
  • 1 egg
  • salt to taste {plus sea salt for topping}

Instructions

  • place the nuts/flax in the bowl of a food processor
  • pulse until you have a ground nut flour
  • add the egg and 1/2 - 1 tsp salt
  • pulse to combine
  • roll the dough on a lined baking sheet {about 1/4 inch thick}
  • score the top into whatever size crackers you prefer {do not cut all the way through}
  • bake at 350 for 12 - 15 minutes
  • ** watch the crackers towards the end, they will go from golden to burned FAST
  • cool on baking sheet, and break apart
  • store in an airtight container
