The end of November is a strange time of year. It’s still fall, but for some ( like my poor family in Buffalo, NY) already feels like the middle of winter. Thanksgiving is fast approaching, but yet everyone’s focus has moved on to Christmas. We’re pretty much straddling two seasons and two holidays.
That’s exactly how I feel about gingerbread. You really only see it or hear bout it at Christmas time, but to me the molasses, ginger, and spices are definitely fall-like in flavor. I happen to love gingerbread, and of course gingerbread men, so I turned them into a delicious pancake breakfast, and since it is holiday time, plenty of chocolate chips were added.
Ingredients
- 1 cup AP flour
- 2 Tbsp brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp ginger
- 1/8 tsp ground cloves
- 2 Tbsp butter. melted
- 2 Tbsp molasses
- 1 egg
- 1 cup milk
- chocolate chips
Instructions
- pre-heat your griddle or skillet to medium
- combine all of the dry ingredients
- whisk together the butter, molasses, egg, and milk
- pour the wet ingredients over the dry, and stir just until combined
- pour by 1/4 cup onto skillet, top with chocolate chips
- cook until the center begins to set and tiny bubbles appear on the surface, flip and cook until the bottom is golden brown - about another minute
- pancakes my be kept warm in a 200 degree oven
- serve with plenty of butter and syrup

These are gorgeous Heather. My kids have been asking to make gingerbread men. I find the whole process sort of taxing. I’ll make these fabulous pancakes instead-we all win!
