French Toast Bread Pudding Muffins

You all know how I feel about bread,

{yes I’m certain that I could live on bread alone}

so it shouldn’t surprise anyone that I also love bread pudding.

enough said

 

BUT…

I don’t really think it should be thrown in the dessert category.

When you think about it

it’s eggs

milk

maybe a bit of sugar

vanilla

bread

sounds like the makings of breakfast to me.

 

French Toast Anyone

So it got me to thinking…

we love our breakfast

we really love french toast

and muffins have been a great quick option for us lately

 

why  not french toast

aka bread pudding

muffins

 

and I happen to have an extra loaf of whole wheat and cinnamon brioche

{in my opinion brioche make the BEST french toast}

I was ready for a recipe fail

not really having much of a guide,

but I was SO very pleasantly surprised.

 

They are muffins

that taste just like

cinnamon french toast

and bread pudding

all rolled into one cute little package.

French Toast Bread Pudding Muffins

Ingredients

  • 1 loaf of cubed brioche or challah
  • 4 eggs
  • 2 cups of whole milk
  • 1/2 cup maple syrup
  • 2 tsp vanilla
  • 1/2 tsp cinnamon

Instructions

  • whisk together the milk, eggs, vanilla, and maple syrup
  • pour over the bread cubes
  • allow to sit for at least 15 minutes
  • {most of the liquid should be absorbed}
  • place about 1/2 cup of soaked bread in lined muffing tins
  • bake at 325 for 30 minutes

You could add a drizzle of syrup or powdered sugar,

but they were delicious au natural.
