So… two peppermint recipes in a week, and it’s not even Thanksgiving. I’m not sure what has gotten into me. I really do enjoy all things Thanksgiving,and I am a firm believer in one holiday at a time, but the smell of those doughnut muffins baking last weekend was too much. I’ve got chocolate and peppermint on the brain.
That, and these are quite simply the easiest cookies on the planet. Which is really good because let me tell you I have been less than enthusiastic about the kitchen this week.

I spent all last weekend baking up a storm, finalizing my holiday menu, planning a dinner for friends, and then all of a sudden I just can’t even look at my kitchen anymore.
ZERO motivation. It was so bad that on Wednesday I fed my kids frozen pizza for dinner. Stella refused to even come to table.
I figured cookies would help her forget.
Ingredients
- 2 cups of confectioners sugar
- 1 cup of cocoa powder
- 1/2 tsp salt
- 1 tsp vanilla
- 2 tsp peppermint extract
- 3 egg whites
Instructions
- line baking sheets with parchment
- pre-heat the oven to 350 degrees
- combine all of the cookie ingredients and beat until smooth (by hand or using a stand mixer)
- drop by tablespoon onto the prepared baking sheets (leave plenty of room for spreading)
- bake 10 minutes
- allow cookies to cool completely before removing them from cookie sheets

Happens to me all the time. I get on this awesome roll and then the fact that I have to even entertain the idea of making another meal for about three days kills me. Good things cookies like these babies will make everyone forget!

Making these now & my batter is pure liquid-help!
I wish I could help – mine was not that runny – the only liquid is from the egg whites, so unless your eggs were extra large – but you could easily add more confectioners sugar and cocoa powder to make up for the excess liquid
