Flourless Chocolate Cookies
What a week this has been.
It’s the first full week that both kids have been in school.
I feel like I have been hit by a bus.
With homework, practice, football game, puppies
I’m not sure which end is up at the moment.
Add a migraine to the mix, a few extra carpoolers
– 12 year old boy conversation is VERY interesting
and I’m ready for a vacation.
Good thing it’s a long weekend.
To cure my back-to-school blues I made cookies.
Possibly the best cookies I have ever made.
These are flourless, a bit gooey in the middle, seriously chocolately, and a little bit of heaven right here in my kitchen.
If these don’t make you feel better, I’m not sure anything will.
Flourless Chocolate Cookies:
1 cup of chopped bittersweet or dark chocolate
3 egg whites (I used 3 because our yard chick lay small eggs – with large eggs use only 2)
1 cup of sugar
1/2 cup of cocoa powder
1 tbsp corn starch
dash of salt
powdered sugar for rolling (optional)
whisk the egg white and sugar until you have a stiff meringue
melt the chocolate
combine the cocoa powder and the cornstarch
mix this into the meringue and gently fold in the melted chocolate
form into balls
roll in the powdered sugar
bake @ 375 for 8 minutes
who needs Calgon when you can have cookies
