with the exception of a basketball game on saturday mornings, our weekends are fairly schedule free.  charlie and stella are at the ages where they can, for the most part, take care of themselves. come friday they have their weekend plans lined up, and they usually don’t involve ian or i. it took me a while to get used to it, but now i actually enjoy it.

because the kids are in and out all weekend long, meals are few and far between. they pretty much graze friday through sunday afternoon. sunday dinners are still mandatory in the kinnaird house. what i do know, is that left completely without options teenagers will choose junk food, so i try to have some easy grazing options available. cheese and crackers are still one of their favorites. charlie could eat his weight in chips and salsa or guacamole. and stella and her sweet tooth can single handedly take down this loaf of double chocolate banana bread.

Ingredients:

  • 1 1/2 cup flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 stick (1/2 cup) butter softened at room temperature
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla
  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1/2 cup chopped chocolate
 

Directions:

  • preheat the oven to 350 degrees
  • grease a standard size loaf pan
  • in a large bowl whisk together the flour, cocoa powder, baking soda, and salt
  • in the bowl of a stand mixer fitted with the paddle attachment cream the butter and sugar on medium speed until light and fluffy (about 3 minutes)
  • add the eggs one at a time, making sure they are completely incorporated,and then add vanilla
  • reduce mixer speed to low and add flour, followed by the banana and sour cream
  • mix until we combined and then fold in the chocolate chunks
  • pour into the prepared pan
  • bake at 350 degrees for 50-55 minutes (pick inserted in the center should come out clean)
  • cool in pan on a wire rack for 15 minutes, carefully remove loaf from an and cool on rack
  • cool completely before slicing

banana bread is one of those foods that i find perfect to eat at any time of day. toasted with butter along your morning coffee or tea. for lunch with some fruit salad, at snack time, and this double chocolate banana bread makes an incredible dessert.

luckily we always have a few overripe bananas in the house because this double chocolate banana bread is a must for weekend grazing.
