I usually keep a pretty well stocked pantry. Because we do a lot of pancakes and waffles, I always have flour, sugar, baking powder, baking soda, cinnamon, and vanilla. I don’t use it a lot, but I usually also have cocoa powder and powdered sugar.

Usually, but not today of course.

I was half-way through getting a batch of cookies together, when I realized I needed powdered sugar. Not much, but I definitely didn’t want to leave it out. My box was empty, and yes it was in the pantry empty. Not sure how that happened, but it did, and it left me powdered sugar-less.

I probably would have scrapped the cookies altogether if I hadn’t already gotten started. I wasn’t about to head to the store for one item, so I figured I could probably make my own.

Powdered sugar, or confectioners sugar, is simply finely ground sugar with a bit of cornstarch to prevent clumping. If you are only planning on making enough to use right away, go ahead and leave the cornstarch out, but if you plan to save it for later, add it. It creates the silkiest, smoothest powdered sugar. Clump free. Perfect for cookie baking and icing making.

Ingredients

  • 1 cup of sugar
  • 1 Tbsp cornstarch

Instructions

  • place sugar and cornstarch in a blender or food processor
  • blend on high for 1 minute

I used my Blendtec because the blade is much sharper than my 17 year old food processor, but use whatever you have at home; even a spice or coffee grinder will do the trick.
