chia pudding is something people either love or hate. i happen to love it, and when it comes to make-ahead breakfasts, it doesn’t get much easier. some almond milk, some chia seeds, stir and chill. the next morning you have a delicious and healthy breakfast waiting.

my kids don’t care for chia pudding, and i’m fairly certain it’s a texture thing. they don’t like rice pudding or tapioca either, but give them a bowl of vanilla, chocolate, or butterscotch pudding and it disappears.

so, i thought i’d try something different.

how to make creamy chia pudding

i took plain chia pudding (just almond milk and chia seeds) that sat overnight, and blended it with a banana- the riper the better so you don’t need to add sweetener. the result was nothing like typical chia pudding. no slimy gel texture at all. it was thick and creamy, and reminded me of the best homemade banana pudding. and you know how i feel, dessert for breakfast is my favorite.

Ingredients:

  • 1 cup of unsweetened almond milk
  • 1/4 cup chia seeds
  • 1 ripe banana
  • dash salt
  • topping suggestions - sliced banana, cacao nibs, chopped walnuts, shredded coconut
 

Directions:

  • combine the almond milk and chia seeds, cover and refrigerate overnight
  • in the jar of a blender add the chia pudding, ripe banana, and a dash of salt
  • blend until smooth
  • spoon into cups and top with banana slices, cacao nibs or  nuts, and shredded coconut
